If you only have one structure type such as tables, you can ensure that you do not assign a contact to two tables by checking the Limit One Attendee Per Structure tick box.  

To check the field click the Edit button on the Event Details toolbar and click the Limit One Attendee Per Structure tick box on the Structures tab.
