If employees leave organisations a relationship can be created under Lookup Values for Ex-Employer and Ex-Employee. Then instead of removing them completely and having no history you can see the people that were previous employees.

If you have the date the employee started or left the employment these dates can be inserted under the date fields.

The same can be for partner relationships.
